In order to re-configure your IPCop's interfaces, either the external (red) or internal (green), simply log on as root and run setup. From there you will see the menu that was presented during the original installation, and you will be able to choose Networking, then Address.
Don't forget to locate and change the DNS and/or your default gateway if those settings are changing as well.
